Seaweeds have increased in popularity in the past few years.
People seem to enjoy their distinctive flavourings and colour in
soups, stews, main courses, side orders and desserts.
Ireland and Northern Ireland
have a long tradition of using edible seaweeds like Dulse / Dillisk,
and
Carrageen / Irish Moss.
Dulse is eaten as a snack (like a packet of crisps), while Carrageen
/ Irish Moss is used as a dessert or as a COLD REMEDY!!

• Dulse (
Palmaria palmata ) To

o A red seaweed which can be eaten wet or dry. Majority of people
eat it dry and soft and as a snack food. It can be used readily
in various recipes. Please Contact

Smoked Dulse (
Palmaria palmata ) To

o Just like dulse, but with a delicate hint of oak. Lovely just
chopped finely and used as a garnish.

Carrageen / Irish Moss ( Chondrus
crispus ) To

o Another red seaweed. It is used extensively around the World.
This plant produces the extract carrageenan. The main uses are
as a thickening agent in cooking – THIS MAKES AN EXCELLENT
DESSERT (see our recipe page!)
Can also be used as a cold remedy!!

Kombu / Kelp ( Laminaria
digitata ) To

o A brown seaweed. Used mainly in cooking for its distinctive flavour.
Makes a lovely soup.
• Kombu Royale / Sweet Kelp (
Laminaria saccharina )

sweeter flavour.
Delcious wrapped around chicken strips and steamed.
• Wakame
(Alaria esculenta ) To

• Sea
Spaghetti ( Himanthalia elongata

o Brown seaweed that can be used in place of spaghetti! Also used
in salads once steamed. Stays Green.

o A green seaweed that is often eaten as part of salads. It has
a very distinctive flavour and adds colour to any dish. Lovely as
a garnish.

DULSE
CHEESE
We have worked with The Causeway Cheese Company to develop a Drumkeel
Cheese that contains Dulse. This is very popular and demand has
increased steadily.
The Causeway Cheese Company
has been manufacturing hand made farmhouse Drumkeel Cheeses since
October 2001. They produce a range of artisan cheeses and are situated
in the village of Loughgiel near to the famous Giants Causeway and
the Glens of Antrim.
